12 oz spaghetti or linguine

2 large onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup grated Gruyère cheese (plus extra for topping)

1 tbsp olive oil

2 tbsp butter

1 tsp thyme (dried or fresh)

1/2 tsp black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Onions: In a large pot, heat the olive oil and butter over medium heat. Add the sliced onions and cook for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.

    Add Garlic: Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Combine Ingredients: Pour in the vegetable broth and bring to a gentle boil. Add the spaghetti (or linguine) along with the thyme, black pepper, and salt. Stir everything together.

        Cook Pasta: Allow the pasta to cook in the broth, stirring frequently, for about 10-12 minutes, or until al dente. Make sure the pasta absorbs most of the liquid.
