12 oz penne pasta

12 oz smoked sausage, sliced (choose your favorite type)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (14.5 oz) diced tomatoes, with juices

4 cups chicken broth

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup frozen peas

1 cup shredded mozzarella cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Sausage: In a large pot or Dutch oven over medium heat, add the sliced smoked sausage. Cook until browned, about 5-7 minutes. Remove sausage and set aside.

    Cook Vegetables: In the same pot, add the diced onion and bell pepper. Sauté for 4-5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Return the cooked sausage to the pot. Stir in the penne pasta, diced tomatoes (with their juices), chicken broth, Italian seasoning, smoked paprika, red pepper flakes, and a pinch of salt and pepper.

        Simmer: Bring the mixture to a boil. Once boiling, reduce heat to low and cover the pot. Let it simmer for about 12-15 minutes, stirring occasionally until the pasta is al dente and most of the liquid has been absorbed.

          Add Cream and Peas: Stir in the heavy cream and frozen peas. Mix well and cook for an additional 2-3 minutes until the peas are heated through and the sauce is creamy.

            Cheesy Finish: Remove from heat and fold in the shredded mozzarella cheese until melted and creamy. Taste and adjust seasoning with more salt and pepper if needed.

              Serve: Ladle the pasta into bowls and garnish with chopped fresh parsley. Enjoy your one-pot meal!
