One Pot Taco Spaghetti

12 oz spaghetti

1 lb ground beef (or turkey)

1 medium onion, diced

3 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 (10 oz) can diced tomatoes with green chilies

3 cups beef broth (or vegetable broth)

1 can black beans, rinsed and drained

1 cup corn (frozen or canned)

1 bell pepper, diced (any color)

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

Optional toppings: sour cream, avocado, sliced jalapeños

Instructions
 

Cook the Meat: In a large pot or Dutch oven, brown the ground beef over medium heat. Season with salt and pepper. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain any excess fat.

    Sauté Vegetables: Add the diced onion and bell pepper to the pot, and sauté for about 3-4 minutes until they’re softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Spices and Liquids: Sprinkle the taco seasoning over the mixture, stirring to coat the meat and vegetables. Pour in the diced tomatoes with their juices and the beef broth. Stir well.

        Cook the Pasta: Add the spaghetti to the pot, ensuring it's submerged in the liquid. Bring everything to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 10-12 minutes, stirring occasionally, until the spaghetti is tender and has absorbed most of the liquid.

          Mix in the Beans and Corn: Once the spaghetti is cooked, stir in the black beans and corn. Let it cook for another 2-3 minutes to heat through.

            Add Cheese: Remove the pot from heat and sprinkle the shredded cheddar cheese on top. Cover the pot for a few minutes to let the cheese melt.

              Serve: Garnish with fresh cilantro and any desired toppings like sour cream, avocado, or sliced jalapeños. Serve hot and enjoy!
