Ingredients
  

2 salmon fillets (about 6 oz each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 tablespoon olive oil

1 tablespoon unsalted butter

2 cloves garlic, minced

1 lemon (zest and juice)

1 cup cherry tomatoes, halved

1 cup fresh spinach

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Optional: Red pepper flakes for a spicy kick

Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Place the salmon skin-side down in the skillet and sear for about 5-6 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes until they are cooked through. Remove the salmon from the skillet and set aside.

    Cook the Orzo: In the same skillet, add the butter and minced garlic. Sauté for about 1 minute until fragrant. Add the orzo and stir for another minute to toast it slightly.

      Add Broth: Pour in the vegetable or chicken broth, lemon zest, and juice. Stir to combine and bring to a gentle simmer. Cover the skillet and let the orzo cook for about 10-12 minutes, or until al dente, stirring occasionally.

        Incorporate Vegetables: Add in the cherry tomatoes and fresh spinach to the pasta. Cook for an additional 3-4 minutes until the spinach wilts and the tomatoes are slightly softened.

          Combine and Serve: Return the salmon to the skillet, nestling it on top of the orzo and vegetables. Heat through for a minute. Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.

            Garnish and Enjoy: Remove from heat, garnish with fresh parsley, and serve immediately while warm.
