1 ½ cups all-purpose flour

1 cup fresh cranberries, roughly chopped

½ cup granulated sugar

½ cup brown sugar, packed

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 large orange, zested and juiced

1 large egg

½ cup buttermilk

⅓ cup vegetable oil

1 teaspoon vanilla extract

Optional: ¼ cup chopped walnuts or pecans for added crunch

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.

    In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

      In another bowl, mix the orange zest, orange juice, egg, buttermilk, vegetable oil, and vanilla extract. Whisk until smooth.

        Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined. Be careful not to over-mix; a few lumps are okay.

          Fold in the chopped cranberries and nuts if using.

            Divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Bake in the preheated oven for 18-20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

                Remove from the oven and allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
