Ingredients
  

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/4 teaspoon salt

1 cup milk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

6 Oreo cookies, crushed

Additional crushed Oreos for topping

Whipped cream for serving

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

        Fold in the crushed Oreo cookies until evenly distributed throughout the batter.

          Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

            Pour 1/4 cup of the pancake batter onto the skillet for each pancake, cooking for about 2-3 minutes or until bubbles form on the surface and the edges look set.

              Carefully flip the pancakes and cook for another 2-3 minutes on the other side until golden brown.

                Repeat with the remaining batter, greasing the skillet as needed.

                  Stack the pancakes on a plate and top with whipped cream and additional crushed Oreos for garnish.
