1 pound chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooking spray or olive oil for drizzling

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a medium bowl, soak the chicken pieces in buttermilk for at least 30 minutes, or up to overnight in the refrigerator. This will help tenderize the chicken and enhance flavor.

      In another bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.

        Remove the chicken from the buttermilk, allowing the excess to drip off, then coat each piece in the breadcrumb mixture, pressing gently to ensure they're well-coated.

          Place the coated chicken bites evenly on the prepared baking sheet. Lightly spray or drizzle them with olive oil to help achieve a golden crispness.

            Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the coating is crispy. You can turn halfway through to ensure even cooking.

              If desired, broil for an additional 2-3 minutes at the end to achieve an extra crispy texture.

                Remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
