3-4 lbs pork shoulder (or pork butt)

2 tablespoons olive oil

1 tablespoon smoked paprika

1 tablespoon brown sugar

1 tablespoon garlic powder

1 tablespoon onion powder

2 teaspoons ground cumin

1 teaspoon chili powder

1 teaspoon black pepper

1 teaspoon salt

1 cup chicken broth

½ cup apple cider vinegar

¼ cup barbecue sauce (plus extra for serving)

Fresh parsley for garnish

Preheat the Oven: Preheat your oven to 300°F (150°C).

    Prepare the Pork: Pat the pork shoulder dry with paper towels.

      Make the Rub: In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, ground cumin, chili powder, black pepper, and salt. Mix well.

        Season the Pork: Rub the olive oil over the pork shoulder, then apply the spice mixture evenly over all sides of the meat. Make sure the seasoning is well coated.

          Prepare the Baking Dish: Place the pork in a large roasting pan. Pour the chicken broth and apple cider vinegar around the pork in the pan to create steam during cooking.

            Cover and Roast: Cover the roasting pan tightly with aluminum foil to keep moisture in. Place it in the preheated oven and roast for 4-5 hours, or until the pork is fork-tender and easily pulls apart.

              Shred the Pork: Once cooked, remove the pork from the oven and let it rest for about 20 minutes. After resting, use two forks to shred the pork into bite-sized pieces.

                Mix with Sauce: In a bowl, combine the shredded pork with barbecue sauce, mixing until well coated. Adjust the amount of barbecue sauce to your taste.
