8 oz rice noodles

2 tablespoons vegetable oil

2 cloves garlic, minced

1/2 cup firm tofu, cubed (or shrimp/chicken for non-vegetarian)

2 eggs, lightly beaten

1 cup bean sprouts

1/2 cup green onions, chopped (green parts only)

1/4 cup roasted peanuts, crushed

2 tablespoons fish sauce (or soy sauce for a vegetarian option)

1 tablespoon tamarind paste

1 tablespoon sugar

1 lime, cut into wedges

Optional: 1/4 teaspoon chili powder (for spice)

Instructions
 

Prepare the Noodles: Cook the rice noodles according to package instructions. Drain and rinse under cold water to prevent sticking. Set aside.

    Cook Protein: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cubed tofu (or shrimp/chicken) and cook until golden brown. Remove from the pan and set aside.

      Sauté Aromatics: In the same pan, add another tablespoon of oil, then add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.

        Scramble Eggs: Push the garlic to one side of the pan and pour in the beaten eggs. Scramble them until fully cooked, then mix with the garlic.

          Combine Ingredients: Add the cooked noodles, tofu, fish sauce, tamarind paste, and sugar to the pan. Toss everything together until evenly mixed and heated through.

            Add Final Touches: Stir in the bean sprouts and green onions, cooking for an additional minute. For some heat, sprinkle in chili powder if desired.

              Serve: Remove from heat and plate the Pad Thai. Top with crushed peanuts and serve with lime wedges on the side for squeezing over the dish.
