2 skin-on sea bass fillets (about 6 ounces each)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh lemon juice

Salt and pepper, to taste

1 teaspoon olive oil

Lemon wedges, for serving

Prepare the fish: Pat the sea bass fillets dry with paper towels and season both sides with salt and pepper.

    Preheat the pan: In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.

      Sear the fish: Place the sea bass fillets skin-side down in the hot skillet. Sear for about 4-5 minutes, without moving, until the skin is crispy and golden brown.

        Flip and roast: Carefully flip the fillets and transfer the skillet to a preheated oven at 400°F (200°C). Roast the fish for 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.

          Prepare the garlic butter: While the fish is roasting, melt the butter in a small saucepan over low heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Remove from heat and stir in the chopped parsley and lemon juice.

            Serve: Once the sea bass is cooked, remove the skillet from the oven. Spoon the garlic butter over the fish, letting it melt into the crispy skin. Serve immediately with lemon wedges on the side.
