1 cup all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

1 tablespoon sugar

1 large egg

3/4 cup milk (or almond milk for a dairy-free option)

2 tablespoons melted butter (or coconut oil for a dairy-free option)

1 teaspoon vanilla extract

1/2 cup chocolate chips or blueberries (optional)

Maple syrup for drizzling (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it lightly with non-stick spray.

    In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.

      In a separate bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Mix until smooth.

        Pour the wet ingredients into the dry ingredients. Gently fold them together until just combined; be careful not to overmix. If you're adding chocolate chips or blueberries, fold them in at this point.

          Use a tablespoon or a mini ice cream scoop to fill each muffin cup about 3/4 full with the batter.

            Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into the center of a muffin comes out clean.

              Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.

                Serve warm, drizzled with maple syrup if desired.
