4 boneless, skinless chicken breasts

2 tablespoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for extra heat)

3 tablespoons olive oil

1 medium onion, thinly sliced

1 bell pepper (red or yellow), sliced

1 cup cherry tomatoes, halved

1 cup chicken broth

Fresh parsley for garnish

Prepare the Chicken: Pat the chicken breasts dry with paper towels. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper if using. Rub this spice mixture evenly over both sides of the chicken breasts.

    Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned chicken breasts to the pan and sear for about 5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the sliced onion and bell pepper for about 3-4 minutes, or until they are softened and slightly caramelized.

        Add the Tomatoes: Stir in the cherry tomatoes and cook for an additional 2 minutes until they start to burst and release their juices.

          Combine and Simmer: Return the seared chicken breasts to the skillet, and pour in the chicken broth. Bring everything to a simmer, cover, and cook for 10-15 minutes, or until the chicken is cooked through (internal temperature of 165°F).

            Finish and Serve: Remove the lid and check the consistency of the sauce. If it’s too thin, let it simmer uncovered for a few more minutes until thickened to your liking. Taste and adjust seasoning if needed. Garnish with freshly chopped parsley before serving.
