8 oz fettuccine pasta

4 slices of thick-cut bacon, chopped

1 cup fresh sweet corn kernels (or frozen)

2 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

2 tablespoons fresh basil, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy and browned, about 6-8 minutes. Use a slotted spoon to remove the bacon from the skillet and let it drain on paper towels, leaving the bacon drippings in the skillet.

      Sauté the Corn and Garlic: In the same skillet with the bacon drippings, add the fresh corn kernels and sauté for about 3-4 minutes until they start to caramelize. Add the minced garlic and red pepper flakes (if using) and cook for an additional minute until fragrant.

        Make the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Gradually add the Parmesan cheese while continuing to stir until smooth and creamy. If the sauce is too thick, add a splash of the reserved pasta water until the desired consistency is reached.

          Combine Pasta and Bacon: Add the cooked fettuccine and crispy bacon to the skillet, tossing everything together until the pasta is well coated. Season with salt and pepper to taste.

            Serve: Remove from heat and transfer to serving plates. Garnish with fresh basil and an additional sprinkle of Parmesan cheese if desired.
