4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs, beaten

2 tablespoons Dijon mustard

1/4 cup fresh parsley, chopped (for garnish)

Olive oil spray (for baking)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a shallow bowl, mix together the grated Parmesan cheese, panko breadcrumbs, oregano, basil, garlic powder, onion powder, salt, and pepper until well combined.

      In another bowl, whisk together the beaten eggs and Dijon mustard until smooth.

        Take each chicken breast and dip it into the egg mixture, allowing excess to drip off, then coat it in the Parmesan breadcrumb mixture, pressing gently to ensure it sticks.

          Place the coated chicken breasts on the prepared baking sheet. Lightly spray the tops with olive oil spray to help them crisp up.

            Bake in the preheated oven for 25-30 minutes, or until the chicken is golden and cooked through (internal temperature should reach 165°F or 75°C).

              Once done, remove from the oven and let rest for a few minutes before slicing.

                Garnish with chopped parsley for a fresh finish before serving.
