1 pound carrots (peeled and cut into matchsticks)

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the carrot matchsticks with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until the carrots are evenly coated.

      Spread the seasoned carrot fries in a single layer on the prepared baking sheet, ensuring that they don’t overlap.

        Sprinkle the grated Parmesan cheese over the carrots, covering them evenly.

          Roast in the preheated oven for 20-25 minutes, or until the carrots are crispy and golden brown, flipping them halfway through for even cooking.

            Once done, remove from the oven and let them cool for a few minutes. Garnish with fresh chopped parsley before serving.
