8 oz. spaghetti or your choice of pasta

2 tbsp olive oil

1 cup mushrooms, sliced (cremini or button mushrooms work well)

2 cups fresh spinach, roughly chopped

3 cloves garlic, minced

1/2 cup grated Parmesan cheese, plus extra for serving

1/2 cup heavy cream

1/4 tsp red pepper flakes (adjust according to spice preference)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Lemon wedges for serving (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown and soft.

      Add Spinach and Garlic: Stir in the chopped spinach and minced garlic. Cook for an additional 3-4 minutes, until the spinach has wilted and the garlic is fragrant.

        Create the Sauce: Lower the heat, and pour in the heavy cream. Stir in the red pepper flakes, salt, and pepper. Allow the mixture to simmer for about 2-3 minutes until the cream slightly thickens.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet along with the reserved pasta water. Toss everything together until the pasta is well coated in the creamy mixture. Stir in the grated Parmesan cheese until it melts and combines with the sauce.
