Ingredients
  

1 cup creamy peanut butter

1/2 cup honey or maple syrup

3 cups mixed cereal (such as rice cereal, oats, and granola)

1/2 cup chopped nuts (almonds, walnuts, or pecans)

1/2 cup mini chocolate chips (optional)

1/4 teaspoon salt

1 teaspoon vanilla extract

Instructions
 

In a medium saucepan over low heat, combine the peanut butter and honey (or maple syrup). Stir continuously until the mixture is smooth and well combined. Remove from heat.

    In a large mixing bowl, combine the mixed cereal, chopped nuts, salt, and vanilla extract. Stir until evenly mixed.

      Pour the warm peanut butter mixture over the cereal mixture, and mix well until all the cereal is coated.

        If using, fold in the mini chocolate chips until evenly distributed.

          Line an 8x8 inch baking dish with parchment paper, leaving some excess paper hanging over the edges for easy removal.

            Press the cereal mixture firmly into the prepared baking dish, spreading it out evenly with a spatula or your hands.

              Allow the bars to cool at room temperature for about 30 minutes, or refrigerate for quicker set-up.

                Once set, lift the bars out using the parchment paper, and cut them into squares or rectangles.

                  Store the bars in an airtight container at room temperature for up to a week, or refrigerate for longer freshness.
