1 cup warm water (110°F)

2 1/4 teaspoons active dry yeast (1 packet)

2 tablespoons sugar

3 1/2 to 4 cups all-purpose flour

1 teaspoon salt

2 tablespoons olive oil

6 ounces sliced pepperoni

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

1 egg (for egg wash)

Parmesan cheese (for topping, optional)

Marinara sauce (for dipping, optional)

Instructions
 

In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes, or until it becomes frothy.

    Add 2 tablespoons of olive oil and salt to the yeast mixture. Gradually mix in the flour, one cup at a time, until a dough forms.

      Knead the dough on a floured surface for about 5-7 minutes, or until it's smooth and elastic. If the dough is too sticky, add a bit more flour.

        Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm spot for about 1 hour, or until it doubles in size.

          Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

            Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a rectangle about 1/4 inch thick.

              Evenly distribute the pepperoni slices over the dough, leaving a small border around the edges. Sprinkle the mozzarella cheese and Italian seasoning on top of the pepperoni.

                Starting from one long edge, carefully roll the dough tightly into a log. Pinch the edges to seal and tuck in the ends to prevent filling from escaping.

                  Slice the log into 1-inch thick pieces and place them on the prepared baking sheet. Brush the tops with a beaten egg for a shiny finish and sprinkle with Parmesan cheese, if desired.

                    Bake in the preheated oven for 20-25 minutes, or until golden brown. Let them cool slightly before serving.

                      Serve warm with marinara sauce for dipping.
