1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

2 (8 oz) packages cream cheese, softened

1 cup powdered sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon lemon zest

½ cup sour cream

Fresh berries (strawberries, blueberries, or raspberries) for topping

Preheat the oven to 325°F (160°C). Line an 8x8 inch baking dish with parchment paper, leaving a little overhang for easy removal later.

    Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and the crumbs are moistened. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer.

      Bake the crust in the preheated oven for about 10 minutes, or until lightly browned. Remove from the oven and let it cool slightly.

        Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and continue mixing until well combined.

          Add the eggs, one at a time, mixing well after each addition. Then add the vanilla extract, lemon zest, and sour cream. Mix until smooth and well incorporated.

            Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula.

              Bake the cheesecake bars in the oven for approximately 25-30 minutes, or until the center is set but still slightly jiggles.

                Remove from the oven and let it cool at room temperature for about an hour. Then refrigerate for at least 3 hours, or overnight for the best results.

                  Once chilled, lift the cheesecake out of the pan using the parchment overhang. Cut into squares and top with fresh berries before serving.
