2 large russet potatoes

1 lb beef flank steak, thinly sliced

1 cup bell peppers, sliced (mix of red and green)

1 medium onion, sliced

1 cup provolone cheese, shredded

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: Preheat the oven to 425°F (220°C). Wash the russet potatoes thoroughly, then slice them into thick fries (about 1/2 inch thick).

    Season and Bake: Toss the fries in a bowl with 1 tablespoon of olive oil, salt, and pepper. Arrange them in a single layer on a baking sheet. Bake in the preheated oven for 30-35 minutes or until crispy and golden, flipping halfway through.

      Cook the Steak: While the fries are baking, heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Add the sliced flank steak and season with salt and pepper. Cook for about 3-4 minutes until browned and cooked through. Remove from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the onions and bell peppers. Sauté for about 5-7 minutes until they are soft and slightly caramelized. Add the minced garlic and sauté for another minute until fragrant.

          Combine Steak and Vegetables: Return the cooked steak to the skillet with the vegetables. Stir everything together, allowing the flavors to combine for another minute or two.

            Assemble the Fries: Once the fries are done, remove them from the oven and transfer to a large serving platter. Pile the steak and vegetable mixture on top of the fries.

              Add Cheese: Generously sprinkle the shredded provolone cheese over the steak and peppers. Return the platter to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
