1 lb thinly sliced ribeye steak

1 tablespoon olive oil

1 medium onion, thinly sliced

1 green bell pepper, thinly sliced

1 teaspoon garlic powder

Salt and pepper to taste

4 slices provolone cheese

4 hoagie rolls

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Steak: In a large skillet over medium-high heat, add the olive oil. Once hot, add the sliced ribeye steak, seasoning it with garlic powder, salt, and pepper. Cook for 3-4 minutes, stirring frequently until the meat is browned. Remove and set aside.

    Cook the Vegetables: In the same skillet, add the onions and bell peppers. Sauté for about 5-6 minutes, or until they’re soft and caramelized. Return the cooked steak to the skillet and mix everything together for another minute or two.

      Prepare the Rolls: Preheat your oven to 350°F (175°C). Slice the hoagie rolls lengthwise but don’t cut all the way through. Spread a thin layer of mayonnaise and Dijon mustard on the inside of each roll.

        Assemble the Sandwiches: Fill each hoagie roll with the steak and vegetable mixture. Top each with a generous slice of provolone cheese.
