12 frozen potato and cheese pierogis

1 pound smoked sausage, sliced (such as kielbasa)

1 medium onion, diced

2 cups fresh baby spinach

1 red bell pepper, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    In the same skillet, add another tablespoon of olive oil. Add the diced onion and red bell pepper. Sauté for 4-5 minutes until softened.

      Stir in the minced garlic and paprika, cooking for an additional minute until fragrant.

        Carefully add the frozen pierogis to the skillet. Stir gently to combine with the onion and pepper mixture. Cook for about 7-10 minutes, allowing the pierogis to brown slightly, flipping occasionally.

          Once the pierogis are heated through and have a nice golden color, return the cooked sausage to the skillet. Add the fresh spinach and toss all ingredients together until the spinach wilts, about 2 minutes.

            Season with salt and pepper to taste, adjusting based on preference.

              Remove from heat and serve hot.
