1 pound kielbasa, cut into 1-inch slices

1 ripe pineapple, peeled and cored

2 tablespoons olive oil

1 tablespoon brown sugar

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for heat)

Fresh cilantro or parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    Carefully slice the pineapple into 1-inch thick rounds, then cut each round into thinner half moons or quarter moons depending on your preference. Set aside.

      In a small bowl, mix the olive oil, brown sugar, smoked paprika, garlic powder, black pepper, and red pepper flakes to create a marinade.

        Take each kielbasa slice and make several evenly spaced slits (about ¾ of the way down) on the top without cutting all the way through. This creates the hasselback effect.

          Place the kielbasa slices on a baking sheet. Brush each slice generously with the marinade, making sure it gets into the slits.

            Tuck a piece of pineapple between the slits of each kielbasa bite. You can place additional pineapple rounds around the kielbasa on the baking sheet.

              Bake in the preheated oven for 20-25 minutes, or until the kielbasa is heated through and caramelized, and the pineapple is slightly charred.

                Remove from the oven and let it cool slightly. Garnish with fresh cilantro or parsley before serving.
