Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

1 cup unsweetened crushed pineapple (drained)

½ cup unsalted butter (softened)

½ cup buttermilk

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

For the Pineapple Whipped Cream Topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

½ cup crushed pineapple (drained)

For Garnish:

Fresh pineapple slices

Toasted coconut flakes

Maraschino cherries (optional)

Instructions

Prepare the Cake Batter:

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the buttermilk, crushed pineapple, and vanilla extract.

      Combine Dry Ingredients:

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

          Bake the Cake:

Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

              Make the Pineapple Whipped Cream:

In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat the mixture with an electric mixer until soft peaks form. Gently fold in the crushed pineapple until well incorporated.

                  Assemble the Cake:

Once the cake is completely cooled, spread the pineapple whipped cream topping evenly over the entire surface. You can use an offset spatula for a smooth finish.

                      Garnish:

Decorate your cake with fresh pineapple slices, a sprinkle of toasted coconut flakes, and maraschino cherries if desired.

                          Serve:

Slice and serve your Pineapple Heaven Cake chilled or at room temperature, enjoying the layers of tropical flavors in every bite.
