1 can (20 oz) sliced pineapple in juice, drained (reserve juice)

1/2 cup unsalted butter, melted

1 cup packed brown sugar

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup milk (or reserved pineapple juice)

Maraschino cherries for garnish

Chopped pecans or walnuts (optional, for added crunch)

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or non-stick spray.

    In a small bowl, mix the melted butter with brown sugar until well combined. Spread this mixture evenly across the bottom of the prepared cake pan.

      Arrange the drained pineapple slices over the brown sugar mixture in a decorative pattern. Place a maraschino cherry in the center of each pineapple slice and sprinkle chopped nuts if using.

        In a medium bowl, beat together the granulated sugar and softened butter until light and fluffy. Add vanilla extract and eggs, mixing well until combined.

          In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, alternating with the milk (or reserved pineapple juice) until just combined. Do not overmix.

            Pour the batter gently over the arranged pineapples and spread evenly with a spatula.

              Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                Remove the cake from the oven and let it cool in the pan for about 5-10 minutes. Carefully invert the pan onto a serving plate to release the cake.

                  Let it cool for an additional 10 minutes before slicing and serving.
