Ingredients

1 cup crushed pineapple, drained

1/3 cup brown sugar

2 tablespoons unsalted butter

1 teaspoon vanilla extract

1 package (8 oz) cream cheese, softened

1/2 cup granulated sugar

1 cup sour cream

1/2 teaspoon lemon juice

1 cup crushed graham crackers (for crust)

4 tablespoons melted butter (for crust)

1/2 teaspoon cinnamon (optional)

Maraschino cherries for garnish

Instructions

Prepare the Pineapple Topping: In a medium saucepan over medium heat, melt the butter. Add brown sugar and stir until dissolved. Stir in the drained crushed pineapple and vanilla extract. Cook for about 5 minutes until the mixture is thickened; set aside to cool.

Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese and granulated sugar together until smooth. Add sour cream and lemon juice, and continue mixing until creamy and well combined.

Prepare the Crust: In a separate bowl, combine crushed graham crackers, melted butter, and cinnamon (if using). Mix until all crumbs are coated and crumbly.

Assemble the Cheesecake Cups: In individual dessert cups or ramekins, add a layer of the graham cracker mixture at the bottom, press down lightly. Top with a layer of the pineapple mixture, followed by a generous scoop of the cheesecake filling. Repeat the layers until the cups are filled, finishing with the cheesecake layer on top.

Chill: Cover and place the assembled cups in the refrigerator for at least 4 hours, or overnight to allow the flavors to meld and the cheesecake to set.

Serve: Just before serving, garnish each cup with a maraschino cherry and a sprinkle of crushed pineapple if desired.
