1 cup fresh pineapple chunks

1/2 cup coconut milk

1/2 cup strawberry puree (fresh or store-bought)

1 banana, frozen

1 tablespoon honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

1 cup ice

Fresh strawberries and pineapple slices, for garnish

In a blender, combine the fresh pineapple chunks, coconut milk, strawberry puree, frozen banana, honey or maple syrup, and vanilla extract.

    Add the ice to the blender and blend on high until the mixture is smooth and creamy. Stop to scrape down the sides if necessary.

      Taste the mixture and adjust sweetness if desired by adding more honey or maple syrup. Blend again if you add anything.

        Pour the vibrant pink mixture into tall glasses.
