1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup powdered sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1/4 cup pink lemonade concentrate (thawed)

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 tablespoon lemon zest

Pink food coloring (optional)

1/2 cup granulated sugar (for rolling)

Optional: sprinkles for decoration

Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

    In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.

      Beat in the eggs one at a time, then stir in the vanilla extract and pink lemonade concentrate until well combined.

        In another bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest.

          Gradually add the dry mixture to the wet ingredients, mixing until just combined. If you'd like a more vibrant pink color, add a few drops of pink food coloring and mix well.

            Roll tablespoon-sized balls of dough in the granulated sugar and place them on the prepared baking sheet, leaving about 2 inches between each cookie.

              Gently flatten each cookie with the bottom of a glass or your palm to achieve a uniform thickness.

                Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked but will firm up as they cool.

                  Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                    For an extra touch, sprinkle with decorations or a dusting of powdered sugar once cooled.
