Ingredients

1 large flour tortilla (10 inches)

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup cream cheese, softened

1/4 cup sun-dried tomatoes, chopped

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, for garnish (optional)

Instructions

Prepare the Spinach Mixture: In a medium bowl, combine the chopped spinach, crumbled feta, softened cream cheese, and chopped sun-dried tomatoes. Stir until all ingredients are well mixed.

Season: Add garlic powder, black pepper, and red pepper flakes (if using). Mix thoroughly to ensure the seasoning is evenly distributed.

Assemble the Pinwheels: Lay the flour tortilla flat on a clean surface. Spread the spinach and feta mixture evenly over the tortilla, leaving about 1 inch of space around the edges.

Roll it Up: Start from one edge of the tortilla and tightly roll it away from you into a log. Be sure to keep it tight but not so tight that the filling spills out.

Slice: Once rolled, use a sharp knife to slice the pinwheel log into 1-inch thick pieces.

Serve: Arrange the pinwheels on a serving platter, and garnish with fresh parsley if desired. Serve immediately or cover and refrigerate until ready to serve.

Prep Time: 10 mins | Total Time: 20 mins | Servings: 4-6 (makes about 12 pinwheels)
