1 cup shelled unsalted pistachios (plus extra for garnish)

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup granulated sugar

1/2 cup brown sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1/2 teaspoon cardamom (optional, for a unique flavor)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

    In a food processor, pulse the shelled pistachios until they are coarsely chopped but not a fine powder. Set aside.

      In a mixing bowl, combine the flour, baking powder, baking soda, salt, and cardamom (if using). Whisk together to combine and set aside.

        In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

          Beat in the eggs one at a time, followed by the vanilla extract, until well blended.

            Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.

              Gently fold in the chopped pistachios until evenly distributed throughout the batter.

                Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Garnish with extra chopped pistachios on top for added texture.

                  Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

                    Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
