4 large Yukon gold potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

3 cups vegetable broth (or chicken broth)

1 cup whole milk

1 cup heavy cream

1 tablespoon butter

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley, chopped for garnish

Instructions
 

In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and cook for about 5 minutes, until it's soft and translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes to the pot and stir well to coat them with the onion and garlic mixture.

        Pour in the vegetable or chicken broth and bring the soup to a boil. Once boiling, reduce the heat and let it simmer uncovered for about 15-20 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, use a potato masher or an immersion blender to mash the potatoes until you achieve your desired creaminess (leave some chunks for texture, if preferred).

            Stir in the whole milk and heavy cream, and season with smoked paprika, dried thyme, salt, and pepper. Let it simmer for another 5 minutes on low heat to combine the flavors.

              Taste and adjust seasoning if needed, then remove from heat.
