Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 can (15 oz) mixed vegetables (peas, carrots, corn)

1 cup uncooked rice (white or brown)

2 cups beef broth (or vegetable broth)

1 tsp Italian seasoning

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté for 2-3 minutes until fragrant. Then, add the ground beef or turkey. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Combine Ingredients: Stir in the undrained diced tomatoes, mixed vegetables, uncooked rice, and beef broth. Add Italian seasoning, salt, and pepper to taste. Mix everything thoroughly and bring to a gentle simmer for about 5 minutes.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish. Spread it evenly.

          Add Cheese: Top the mixture with shredded cheese, covering it completely.

            Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and lightly golden, and the rice is cooked through.

              Garnish & Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Serve hot and enjoy!
