2 lbs of chuck roast

1 tablespoon olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 tablespoon onion powder

1 teaspoon black pepper

1 teaspoon salt

1 cup beef broth

1 tablespoon Worcestershire sauce

1 medium onion, sliced

2 carrots, chopped

2 tablespoons butter

Instructions
 

Prepare the Roast: Preheat your oven to 325°F (163°C). Pat the chuck roast dry with paper towels and tie it with kitchen twine to hold its shape.

    Seasoning Mix: In a small bowl, combine minced garlic, rosemary, thyme, onion powder, black pepper, and salt. Rub this mixture all over the roast, ensuring it's well coated.

      Searing the Meat: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, sear the roast for about 4-5 minutes on each side or until a golden crust forms.

        Add the Vegetables: Remove the roast from the skillet and set it aside. In the same skillet, add the sliced onion and carrots, and sauté them for 3-4 minutes until they begin to soften.

          Deglazing the Skillet: Pour in the beef broth and Worcestershire sauce to deglaze the skillet, scraping any browned bits from the bottom with a spatula.

            Roasting: Return the roast to the skillet on top of the veggies. Place the skillet in the preheated oven and roast for about 2 to 2.5 hours, or until the internal temperature reaches your desired doneness (medium-rare is around 135°F or 57°C).

              Resting the Meat: Once cooked, remove the roast from the oven, cover it loosely with aluminum foil, and let it rest for 15-20 minutes. This allows the juices to redistribute.

                Final Touches: While the roast is resting, melt the butter in the same skillet over medium heat to create a flavorful sauce with the drippings. Stir to combine and adjust seasoning if necessary.
