4 bone-in pork chops (about 1-inch thick)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

6 slices of thick-cut bacon, chopped

1 small onion, finely diced

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Transfer the bacon to a paper towel-lined plate, leaving the bacon fat in the skillet.

      Sear the Pork Chops: Increase the heat to medium-high. Add the olive oil to the skillet and let it heat up. Place the pork chops in the skillet and sear for about 4-5 minutes on each side until golden brown and cooked to an internal temperature of 145°F (63°C). Once cooked, transfer the pork chops to a plate and cover them with foil to keep warm.

        Sauté the Aromatics: In the same skillet, add the diced onion and sauté for about 2-3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.

          Make the Sauce: Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Allow it to simmer for about 3-4 minutes until reduced by half. Stir in the heavy cream, Dijon mustard, and thyme. Let the sauce simmer for another 2-3 minutes until it thickens slightly.

            Combine Bacon and Chops: Return the cooked bacon to the skillet, and stir to combine. Add the pork chops back into the skillet, spooning the sauce over them. Let them simmer for another minute to heat through.
