4 bone-in pork chops (about 1-inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, finely diced

3 cloves garlic, minced

8 ounces mushrooms, sliced (cremini or button mushrooms work well)

1 cup chicken broth

1 cup heavy cream

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon smoked paprika

2 tablespoons fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Season both sides of the pork chops generously with salt and pepper.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Add the pork chops to the pan and sear for about 4-5 minutes on each side, until they are golden brown. Remove the chops from the pan and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and sauté for about 3 minutes, until translucent. Add minced garlic and sliced mushrooms, cooking until the mushrooms have released their liquid and are browned, approximately 5-7 minutes.

        Make the Gravy: Pour the chicken broth into the pan, scraping up any browned bits from the bottom. Stir in the heavy cream, Worcestershire sauce, dried thyme, and smoked paprika. Bring to a gentle simmer and let it cook for 3-4 minutes to thicken slightly.

          Combine and Cook: Return the pork chops to the pan, spooning some of the gravy over the top. Cover the skillet and let it simmer on low heat for 10-12 minutes, or until the pork is cooked through (internal temperature should reach 145°F).

            Serve: Once cooked, plate the pork chops and generously ladle the mushroom gravy over the top. Garnish with fresh parsley.
