2 thick-cut pork shoulder steaks (about 1-inch thick)

1 tablespoon olive oil

2 cloves garlic, minced

Juice and zest of 1 orange

Juice and zest of 1 lime

1 tablespoon honey

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon black pepper

1 teaspoon kosher salt

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a bowl, whisk together the olive oil, minced garlic, orange juice and zest, lime juice and zest, honey, smoked paprika, ground cumin, black pepper, and kosher salt.

    Place the pork steaks in a shallow dish or a resealable plastic bag. Pour the marinade over the steaks, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to overnight for more flavor).

      Preheat a grill or grill pan over medium-high heat. Remove the pork steaks from the marinade, allowing any excess to drip off.

        Grill the pork steaks for about 6-8 minutes on each side, or until they reach an internal temperature of 145°F (63°C). For extra flavor, brush with leftover marinade during the last 2 minutes of grilling.

          Let the steaks rest for about 5 minutes before slicing. This allows the juices to redistribute and keeps the meat tender.

            Garnish with chopped cilantro and serve with lime wedges on the side for an extra burst of citrus flavor.
