1 pound pork tenderloin

Salt and pepper, to taste

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 tablespoon Dijon mustard

1 tablespoon whole grain mustard

½ cup heavy cream

1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Tenderloin: Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels and season generously with salt and pepper.

    Sear the Pork: Heat olive oil in a large, oven-safe skillet over medium-high heat. Once hot, add the pork tenderloin. Sear on all sides until golden brown, about 3-4 minutes per side. Once seared, transfer the skillet to the oven and roast for about 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Remove from the oven and let it rest.

      Make the Sauce: In the same skillet, add chopped onion and sauté over medium heat until translucent, about 5 minutes. Add minced garlic and sauté for another minute until fragrant.

        Deglaze the Pan: Pour in the chicken broth, scraping the bottom of the skillet to release any flavorful bits. Bring to a simmer and let reduce for about 5 minutes.

          Add Mustards and Cream: Stir in the Dijon and whole grain mustard, followed by the heavy cream. Mix well and let simmer for another 5 minutes until the sauce thickens slightly.

            Finish with Herbs: Add fresh thyme to the sauce, stirring to combine. Taste and adjust seasoning if needed.

              Slice the Pork: After the pork tenderloin has rested, slice it into medallions.

                Serve: Place the pork slices on plates and drizzle the creamy mustard sauce over them. Garnish with fresh parsley.
