Pork Tenderloin with Mustard Sauce

Ingredients
  

1 ½ lbs pork tenderloin

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup low-sodium chicken broth

2 tablespoons Dijon mustard

2 tablespoons whole grain mustard

1 tablespoon honey

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon apple cider vinegar

2 tablespoons heavy cream (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Preheat and Prepare: Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels and season generously with salt and pepper.

    Sear the Tenderloin: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the pork tenderloin and sear on all sides until browned and caramelized, about 3-4 minutes per side.

      Add Garlic: Once seared, add minced garlic to the skillet and sauté for about 1 minute until fragrant.

        Make the Sauce: In a small bowl, whisk together the chicken broth, Dijon mustard, whole grain mustard, honey, thyme, and apple cider vinegar. Pour this mixture around the pork in the skillet.

          Roast: Transfer the skillet to the heated oven and roast for 18-20 minutes or until the internal temperature of the pork reaches 145°F (63°C). Baste the pork with the sauce halfway through cooking.

            Rest & Finish: Once cooked, remove the tenderloin from the oven and let it rest for 5-10 minutes. If desired, stir heavy cream into the sauce for a richer flavor.

              Slice & Serve: Slice the pork into medallions and serve drizzled with the mustard sauce. Garnish with fresh parsley for a pop of color.
