Ingredients
  

3-4 lbs beef chuck roast

2 tablespoons olive oil

4 cloves garlic, minced

2 large onions, quartered

4 carrots, peeled and cut into chunks

4 medium potatoes, peeled and cubed

2 cups beef broth

1 cup cherry tomatoes, halved

2 tablespoons Worcestershire sauce

2 teaspoons dried thyme

2 teaspoons dried rosemary

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 300°F (150°C).

    Season the beef chuck roast generously with salt and pepper on all sides.

      In a large, oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, sear the roast for about 4-5 minutes on each side until a golden crust forms. Remove the roast and set aside.

        In the same pot, add the minced garlic and cook for 1 minute until fragrant, stirring often to prevent burning.

          Add the quartered onions, carrots, and potatoes to the pot, sautéing for about 5 minutes until slightly tender.

            Return the roast to the pot with the vegetables. Pour in the beef broth and Worcestershire sauce, then sprinkle the thyme and rosemary over everything.

              Add the halved cherry tomatoes on top of the roast for a burst of sweetness.

                Cover the pot with a lid and transfer it to the oven. Let it roast for 3-4 hours, or until the beef is fork-tender.

                  Once done, remove the pot from the oven and let the roast rest for 10-15 minutes before serving.

                    Slice the roast and serve it on a platter, draped with the vegetables and a drizzle of the cooking juices. Remember to garnish with fresh parsley for color and flavor.
