Ingredients
  

4 medium-sized potatoes, diced

1 cup bell peppers, chopped (any color)

1 small onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup shredded cheese (cheddar, mozzarella, or your choice)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Foil: Take large sheets of aluminum foil (about 12x12 inches) and lay them flat on a clean surface.

    Mix Ingredients: In a large bowl, combine the diced potatoes, bell peppers, onion, and minced garlic. Drizzle with olive oil and sprinkle with paprika, thyme, salt, and black pepper. Toss until everything is well-coated.

      Assemble the Packets: Divide the mixture evenly among the foil sheets. Fold the edges of the foil to create a sealed packet, making sure there are no openings for steam to escape.

        Cook the Packets: Preheat your grill or oven to medium heat. Place the foil packets directly on the grill or a baking sheet if using the oven. Cook for 25-30 minutes, or until the potatoes are tender.

          Add Cheese: Carefully open the packets (watch out for hot steam!). Sprinkle the shredded cheese on top of the potato mixture and close the packets again. Cook for an additional 5 minutes, allowing the cheese to melt.

            Serve: Remove the packets from the heat and let them cool for a minute. Carefully open the packets, garnish with fresh parsley, and serve hot. Enjoy your delightful potato foil packets!
