Potato Gnocchi Beef Stew

Ingredients
  

1 lb (450g) beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

2 large carrots, sliced

2 stalks celery, diced

4 cups beef broth

2 cups diced potatoes

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

1 lb (450g) store-bought potato gnocchi

1 cup frozen peas

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

    In the same pot, add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic, sliced carrots, and diced celery, cooking for another 5 minutes until fragrant.

      Return the browned beef to the pot, then pour in the beef broth. Add the diced potatoes, dried thyme, smoked paprika, and bay leaf. Stir well to combine.

        Bring the mixture to a simmer, cover the pot, and reduce the heat to low. Let it cook for about 1.5 hours, or until the beef is tender.

          After the beef has cooked, stir in the potato gnocchi and frozen peas. Cook for an additional 5-7 minutes until the gnocchi float to the top and are tender.

            Taste and adjust seasoning with salt and pepper if necessary. Remove the bay leaf before serving.

              Serve hot, garnished with freshly chopped parsley for an added touch of freshness.
