4 large russet potatoes, peeled and thinly sliced

2 cups heavy cream

1 cup whole milk

2 cups sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

3 cloves garlic, minced

1 teaspoon fresh thyme leaves

Salt and pepper to taste

2 tablespoons unsalted butter (for greasing)

1/2 cup breadcrumbs (for topping)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter.

    In a medium saucepan over medium heat, combine the heavy cream, whole milk, minced garlic, thyme, salt, and pepper. Heat until just simmering, but do not boil. Remove from heat.

      In the greased baking dish, layer half of the potato slices on the bottom, slightly overlapping them.

        Pour half of the creamy mixture evenly over the potato layer. Sprinkle half of the cheddar and Gruyère cheese over the top.

          Repeat the layering process with the remaining potatoes, followed by the remaining creamy mixture and cheeses.

            In a small bowl, mix the breadcrumbs with a pinch of salt and some freshly cracked pepper. Sprinkle this mixture evenly over the top layer of cheese.

              Cover the baking dish with aluminum foil and bake for 30 minutes.

                After 30 minutes, remove the foil and bake for an additional 25-30 minutes, or until the cheese is bubbling and golden brown on top.

                  Let it cool for about 10 minutes before serving. Garnish with chopped fresh parsley for added color and flavor.
