12 mini sweet bell peppers (variety of colors)

1 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/2 cup cooked chorizo, crumbled

1/4 cup fresh cilantro, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon onion powder

Salt and pepper to taste

Optional: sliced jalapeños for extra heat

Instructions
 

Preheat your oven to 375°F (190°C).

    Slice the mini sweet peppers in half lengthwise and remove the seeds.

      In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, cooked chorizo, chopped cilantro, garlic powder, smoked paprika, onion powder, salt, and pepper. Mix until well combined.

        Using a small spoon, fill each pepper half with the cheese and chorizo mixture, pressing down to pack it in.

          Arrange the stuffed peppers on a baking sheet lined with parchment paper.

            Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the cheese is bubbly and slightly golden.

              Remove from the oven and let cool for a few minutes before serving. Garnish with additional cilantro if desired.
