4 large russet potatoes

1 cup sour cream

1 cup shredded sharp cheddar cheese

½ cup cooked bacon, crumbled

¼ cup green onions, finely chopped

¼ cup unsalted butter, softened

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Additional cheese and green onions for topping

Instructions
 

Preheat your oven to 400°F (200°C).

    Scrub the potatoes thoroughly and prick them with a fork several times. Place them on a baking sheet and bake for 45-60 minutes or until tender.

      Once the potatoes are done, remove them from the oven and let cool for about 10 minutes.

        Slice each potato in half lengthwise and scoop out the flesh into a large bowl, leaving a small border to maintain the potato skins.

          To the bowl with the potato flesh, add sour cream, shredded cheese, crumbled bacon, green onions, softened butter, garlic powder, smoked paprika, salt, and pepper. Mix until creamy and well combined.

            Spoon the potato mixture back into the potato skins, heaping it generously.

              Top each potato half with additional shredded cheese and sprinkle extra green onions on top.

                Place the stuffed potatoes back in the oven and bake for an additional 15-20 minutes until the tops are golden brown and the cheese is melted.

                  Remove from the oven and let cool slightly before serving.
