3 medium potatoes (russet or Yukon gold), diced

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

3 tablespoons olive oil

4 large eggs (optional, for serving)

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook for about 10-12 minutes, stirring occasionally, until they are golden and crispy on the outside but tender inside. Remove from the skillet and set aside.

Cook for another 5-7 minutes, allowing the flavors to meld together and everything is heated through. Adjust seasoning with salt and pepper as needed.
