1 cup all-purpose flour

1/2 cup rolled oats

1/3 cup brown sugar, packed

1/4 cup granulated sugar

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 cup canned pumpkin puree

1/2 cup sweetened condensed milk

1 large egg

1 teaspoon vanilla extract

1 teaspoon pumpkin spice

1/2 cup chopped pecans or walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease or line an 8x8 inch baking pan with parchment paper for easy removal.

    In a medium mixing bowl, combine flour, rolled oats, brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Mix well.

      Stir in the melted butter until everything is evenly combined and crumbly. Reserve about 1/2 cup of this mixture for the topping, and press the rest firmly into the bottom of the prepared pan to form the base.

        In another bowl, whisk together the pumpkin puree, sweetened condensed milk, egg, vanilla extract, and pumpkin spice until smooth and fully combined.

          Pour the pumpkin filling over the crust in the baking pan, spreading it out evenly.

            Crumble the reserved topping mixture over the pumpkin filling. If using, sprinkle the chopped nuts on top for added crunch.

              Bake in the preheated oven for 30-35 minutes, or until the edges are golden and the center is set.

                Once done, remove from the oven and allow to cool completely in the pan on a wire rack. Once cooled, lift out of the pan using the parchment paper and cut into bars.
