Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, nuts, pumpkin seeds, pumpkin pie spice, and salt. Mix well to ensure an even distribution of the spices.
In a separate bowl, whisk together the pumpkin puree, honey or maple syrup, and vanilla extract until smooth.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread the granola mixture onto the prepared baking sheet in an even layer.
Bake in the preheated oven for about 25-30 minutes, stirring every 10 minutes to ensure even baking until the granola is golden brown.
Remove from the oven and let it cool completely on the baking sheet; it will become crunchier as it cools.
Once cooled, add the dried cranberries or raisins if desired, and mix to combine.
Store your granola in an airtight container for up to two weeks.

Serve in mason jars or clear glass containers for an attractive display. Layer with yogurt and fresh fruits for a parfait.
