Ingredients
  

2 cups queso blanco cheese, shredded (or white cheddar)

1 cup cream cheese, softened

1 cup whole milk

1 medium jalapeño, finely chopped (seeds removed for less heat)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

½ teaspoon smoked paprika

Salt to taste

Fresh cilantro, for garnish

Tortilla chips, for serving

Instructions
 

In a medium saucepan over low heat, combine the cream cheese and whole milk. Stir gently until the cream cheese is completely melted and the mixture is smooth.

    Add the shredded queso blanco cheese to the saucepan, a little at a time, continuing to stir until fully melted and incorporated.

      In a separate skillet, heat a splash of olive oil over medium heat. Add the chopped onion and jalapeño. Sauté for about 5-6 minutes, until the vegetables are soft.

        Add the minced garlic, cumin, and smoked paprika to the skillet. Sauté for another 1-2 minutes until fragrant.

          Transfer the sautéed mixture into the cheese sauce and stir until well combined. Season with salt to taste.

            Allow the queso to simmer on low for about 5-10 minutes, stirring occasionally until the desired consistency is reached. If it's too thick, add a little more milk.

              Once ready, transfer the queso to a serving bowl and garnish with fresh cilantro.
