1 gallon whole milk

1 cup distilled white vinegar

1 teaspoon salt

Optional: 2 tablespoons chopped fresh herbs (like cilantro or parsley) for flavor

Instructions
 

In a large pot, heat the whole milk over medium heat, stirring occasionally to prevent scorching, until it reaches about 190°F (just before it starts to boil).

    Once warmed, remove the pot from the heat and slowly add the distilled white vinegar, stirring gently. The milk will start to curdle as the curds separate from the whey.

      Let the mixture sit for about 5-10 minutes to allow the curds to form completely.

        Line a colander with cheesecloth or a thin, clean kitchen towel, then pour the curdled mixture into the colander to strain out the whey.

          Gather the corners of the cheesecloth and gently squeeze to remove excess whey, being careful not to press too hard as you don’t want to break the curds.

            Transfer the curds to a mixing bowl and stir in the salt and any optional fresh herbs for added flavor.

              Once mixed, you can either press the curds into a mold or shape them into small discs by hand.

                Wrap the cheese in plastic wrap or store it in an airtight container in the refrigerator. Chill for at least an hour before using to firm it up.

                  Serve your fresh Queso Fresco crumbled over tacos, salads, or enjoy it on its own with some fresh crusty bread.
