4 plain bagels, split in half

4 large eggs

1 cup whole milk

1 cup shredded cheese (cheddar or your favorite blend)

1 cup diced vegetables (bell peppers, spinach, and onions)

1/2 cup cooked and crumbled bacon or sausage (optional)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon paprika

Fresh chives or parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large bowl, whisk together the eggs, whole milk, salt, black pepper, and paprika until well combined.

      Add the shredded cheese, diced vegetables, and cooked bacon or sausage (if using) to the egg mixture. Stir to combine.

        Take the bagel halves and place them cut-side up on a baking sheet lined with parchment paper.

          Carefully spoon the quiche filling into the center of each bagel half, filling them generously but making sure it doesn't overflow.

            Bake in the preheated oven for 20-25 minutes, or until the egg mixture is set and the bagels are golden brown on the edges.

              Remove from the oven and let cool slightly before serving.

                Garnish with freshly chopped chives or parsley for extra flavor.
